Combining fats with other fats may also prove problematic. Fatty foods are slow moving and take a long time to digest. Most people don’t notice this because their digestion is already slow. Once we start to eat more high water content foods, it is easier to notice how fatty foods slow down our digestion and cause discomfort.

If we plan on eating cooked foods during our transition to a fruit based diet, it is important to realize that cooked foods are some of the slowest to digest. This is due to the fact that the heating process removes water from food.

Heat is also known to damage and destroy digestive enzymes in our food, making these meals even harder to digest and assimilate. In addition, many cooked foods such as rice have sticky properties. These foods are likely to adhere to our teeth and other parts of our digestive track, slowing down their digestion, and causing complications along the way.

We can use the following rule as a strategy for ingesting different groups of food without causing digestive complications. Before consuming food from a different group, wait 30 to 60 minutes after eating melons; wait 60 to 90 minutes after eating high water content or acid fruits; wait 90 to 120 minutes after eating sub-acid fruits and at least 120 minutes after eating sweet fruits.

If we eat fatty foods such as avocados, seeds and nuts, its best to wait at least three hours before we eat something else. We can do the same if we eat vegetables, although leafy greens and celery allow for a shorter wait time. Cooked foods should be given a longer period to digest, three to four hours at least. Animal products are the slowest to digest, since they are the least compatible with our anatomy. It is recommended to avoid animal produces since they are likely to cause harm to our bodies, even if they are eaten alone. If we do chose to consume animal products, we may want to wait more than four hours before eating anything else.
